It all began with a centuries-old olive grove, abandoned in the heart of the Archaeological Park of the Inviolata, just outside Rome. Where others saw neglected land and forgotten trees, we recognised an extraordinary heritage: hundreds of ancient olive trees, rooted in soil steeped in history and a millennia-old vocation for olive cultivation.

Recovering that grove was more than an agricultural project. It was an act of care for a landscape on the brink of disappearing, a gesture of restoration to the community of something precious. Every tree was pruned, nurtured, brought back to production. Every row was cleared, the soil regenerated through environmentally respectful integrated management.

Today, those olive trees — some of which have stood for centuries — bear fruit of exceptional quality once again. LILL'OLIO is born here: from the decision not to let this richness be lost, and from the commitment to transform an act of recovery into a product that tells the story of its territory with every drop.

Where Sabina meets Tivoli

Our olive grove lies in Guidonia Montecelio, in the heart of the Sabina DOP area. Here, the hillside microclimate encourages an ideal ripening of the olives, giving the product a rare aromatic complexity. But what makes LILL'OLIO truly unique is its position at the crossroads of two olive-growing traditions: the classic characteristics of Sabina DOP oils are blended with the distinctive aromatic intensity and fragrance of the Rotonda di Tivoli — an extremely rare local cultivar that grows naturally on these hills.

Sabina DOP Area

Italy's oldest protected designation of origin for extra virgin olive oil, recognised since 1996. A rigorous set of standards that guarantees excellence.

Hillside microclimate

The hillside exposure and natural ventilation create ideal conditions for the slow ripening of olives, concentrating aromas and polyphenols in the fruit.

Five indigenous cultivars from central Lazio, each with a precise role in the final profile. A blend that expresses the olive-growing biodiversity of the Sabina DOP area.

Rotonda di Tivoli: our signature touch

Among the five cultivars in our blend, Rotonda di Tivoli holds a special place. This extremely rare variety, indigenous to the Tiburtine hills, is virtually unknown outside our territory. It gives LILL'OLIO an unmistakable aromatic complexity and fruitiness that clearly sets it apart from other Sabina DOP oils, merging the Sabina tradition with the unique fragrances of the hills of Tivoli.

From tree to bottle

I

Pruning

From December to May, using the traditional polyconic vase method. Expert pruning is the essential foundation for determining oil quality and counteracting the alternate bearing typical of olive trees.

Soil care

Integrated soil management, respectful of the Inviolata Park ecosystem. The soil is naturally regenerated to nourish the trees and preserve biodiversity.

Early harvest

In early October, when olives are at the veraison stage and reach their peak phenolic concentration. Harvesting with mechanical aids preserves the integrity of the fruit.

IV

Same-day milling

The olives, stored in ventilated crates, are milled within hours of harvesting. Extraction takes place at cold temperatures, below 28°C, to fully preserve the aromatic and antioxidant profile.

Storage and bottling

Stored in stainless steel tanks at controlled temperature, protected from light and heat, to preserve aromatic freshness and phenolic structure over time.

Brilliant golden yellow with green reflections. Clear, with beautiful luminosity and a velvety consistency.
